DESCRIPTION
ColleMassari’s extra virgin olive oil is DOP Toscana–certified and produced according to the principles of organic farming. Harvesting is manual and selective. The olives are cold-pressed within 2 to 4 hours of picking at the estate mill, in order to preserve freshness and aromatic precision.The result is a finely textured oil, low in acidity and high in complexity – vegetal and fresh on the palate, with light bitterness, vibrant spice, and notes of wild herbs and dried fruit.
